I don't realy know why exactly. I do know tecniques have an important role in both. So fast Scale runs and Arpeggio's (so loads of theory too), and even more theory. Harmony, too. Some Metal also has Orchestra's and Choirs in it. (Rhapsody, Nightwish etc). The metalbands that don't often have a "strings ensemble" for keyboard. Though this isn't realy true for normal, more for Symphonic Metal, Power Metal, Melodic Metal, Death Metal and such. Not Metallicaish. Does this answer your question?
